Stevia (Stevia rebaudiana), also called a honey or sweet herb, it has been known as a sweetener in Central and South America for centuries. Its sweet taste is due to steviol glycosides – compounds found in stevia leaves and stems. One teaspoon of powdered stevia leaves corresponds to one cup of sugar. This plant contains vitamin B and C and essential minerals, including magnesium, chromium, calcium, potassium, silicon, zinc, iron, selenium as well as fats and proteins.

Stevia is an alternative not only for sugar, but also for artificial sweeteners. Most importantly, stevia extracts do not raise the glycemic level and sweeteners produced therefore on its basis can "sweeten" the life of people with diabetes. Stevia can’t replace sugar only in the case of hypoglycaemia. Stevia is safe for people suffering from phenylketonuria. What is more, studies shows a beneficial effect of stevia in hypertension and diabetes.

In natural medicine, stevia is used as a strengthening, diuretic and bactericide agent. It is also used in cosmetics e.g. to prepare masks to enhance the complexion and to help with the reduction of wrinkles.

Fresh stevia leaves can be added to salads. Dried powdered leaves can be used in turn to sweeten tea or coffee. Stevia may also be an ingredient of fruit preserves or juice.                

The study conducted by JECFA (Joint Experts Committee on Food Additives) to determine the ADI level has shown that even intake of 100 times higher dose of steviol glycosides than the daily safe dose does not have a negative impact on health.

On the 10th of March 2010, ANS (The Panel on food additives and nutrient sources added to food) published a scientific assessment of the safety of steviol glycosides, prepared at the request of the European Commission. Studies have shown that these substances are not carcinogenic or associated with other negative effects.
